Ingredients

4 pan handva
  • For batter:
  • 1/4 cupChana Dal (split chickpeas)
  • 1/4 cupurad dal (white lentils)
  • 1/4 cuptuar Dal (split pigeon peas)
  • 1/4 cupmasoor dal (red lentils)
  • 1 cupfresh methi Leaves (fenugreek leaves)
  • 1 cupcurd
  • 1/2 tspfenugreek seeds (methi dana)
  • to tasteSalt
  • 1 tspsugar
  • 1 tspginger garlic paste
  • 2green chillies finely chopped
  • 1 tspred chilli powder
  • For tempering :
  • 1 tspMustard seeds
  • 1 tspsesame seeds (white til)
  • 1 pinchasafoetida (hing)
  • Oil for shallow fry & tempering

Steps

  1. 1

    Wash & soak all dals in water for 2 - 3 hours. Add fenugreek seeds. Remove water. Grind in a coarse thick paste. Add salt & curd. Mix well.

    Keep it rest for fermentation for 5-6 hours.

  3. 3

    Add all remaining ingredients of batter. Mix well. (keep aside 4-5 tsp methi Leaves).

    Heat deep pan. Drizzle some oil. Pour 1/2 Inch thick batter. Sprinkle methi Leaves over it.

    Cover lid on pan. Cook it on slow flame. It will take 8-10 minutes to cook until golden. Now flip carefully. Cook bottom side until golden.

    Transfer it in plate. Cut it in desired shape.

    Serve hot with green chutney & tomato sauce.
