Ingredients

  1. step 1
  2. 10 cupshredded zucchini or/and Summer squash
  3. 2shredded or diced colored bell peppers
  4. 3shredded or diced Hatch Peppers
  5. 2small/medium diced red onions
  6. 1/8 cupsea salt
  7. step 2
  8. 3 cupapple cider vinegar
  9. 2 2/3 cuporganic cane sugar
  10. 1 tbspcornstarch
  11. 1/2 tspturmeric
  12. 1 tspground black pepper
  13. 1 1/2 tspcelery seed
  14. 1 tspdry mustard
  15. 1 tspgranulated garlic
  16. 1/4 tspsmoked paprika

Cooking Instructions

  1. 1

    Combine all ingredients in step 1 and let sit overnight. The next day drain off excess liquid.

    The next day combine step 1 with the rest of the ingredients.

  3. 3

    Cook for 30 minutes on a slow boil.

  4. 4

    Can when done. Makes 6 pints.
