Warm EVOO in a saucepan over medium heat. once hot, add rinsed quinoa, toast for 2-3 minutes. Add water, stir, cover and let simmer with lid for 20 minutes.

combine lime juice, oil, cumin, and salt. whisk together.

when quinoa is finished cooking, remove from heat, fluff and add black beans and toss to warm them.

let mixture cool, then add everything together.
