Ingredients

3 servings
  1. 1Long rice
  2. 1Water
  3. 1Coconut milk
  4. 1Nutmeg
  5. 1Salt
  6. 3Garlic
  7. 1Shallot
  8. 1Black Beans
  9. 1Weber grill Caribbean marninade
  10. 1Chicken
  11. 1Lime

Steps

  1. 1

    Follow directions on the weber grill marinade for seasoning chicken. Let that set over night or for minimum 1 hr

  2. 2

    Put marinaded chicken on grill.

  3. 3

    Chop garlic and shallot. Sauté.

  4. 4

    Add water and 1 tbsp of butter and coconut milk.

  5. 5

    Add salt

  6. 6

    Add nutmeg

  7. 7

    Add rice

  8. 8

    Cook for about 20 minutes or until rice is done. Add more water and coconut milk if needed.

  9. 9

    When fully cooked add pre-drained black beans and simmer.

  10. 10

    Remove chicken from grill when finished cooking.

  11. 11

    Let chicken sit for about 5 minutes then serve.

  12. 12

    Garnish with lime for flavor. (It's a must!)
