Ingredients

  1. BottleGourd (Lauki) One. Around 300 to 400 gms
  2. Moong Dal (Yellow Lentils) - 4 to 5 TBSP Soaked
  3. Onion -1 Chopped
  4. Tomato-1 Chopped
  5. Coriander 2 tbsp Chopped
  6. Green Chillies 4 - Chopped
  7. 2 TspGinger Garlic Paste
  8. Curry leaves -8 to 10
  9. 1 1/2 tspTurmeric powder
  10. 1 tspCoriander powder
  11. 2 tspRed chilly powder
  12. 1 tspMustard seeds
  13. 1 tspAsafoetida (Hing)
  14. to tasteSalt
  15. 2-3 tbspOil
  16. 1 tspAjwain (Bishops Weed)
  17. Water as required

Steps

    Cut Lauki in diced cubes. Soak moong dal in hot water and keep it aside. Cut onions, Chillies and tomatoes in small pieces chop coriander and keep it aside.

    Heat Oil in non stick vessel. Add mustard seeds, Chillies, ginger garlic paste, curry leaves and sauté for 3 minutes on medium flame.

    Add tomatoes, onions, turmeric powder, coriander powder, red chilly powder, ajwain and hing (Asafoetida) and sauté for 10 minutes.

    Finally add moong dal and diced Lauki and mix properly. Add a glass of water and salt and mix again. Now lower the flame and keep the vessel covered for 15 to 20 minutes. Keep on stirring every 5 minutes. Check after 20 minutes if the Lauki is cooked you can switch off the gas. Garnish with chopped coriander. Serve hot with Roti or rice. Bon Apetiite.
