Moong Dal with Lauki is a wholesome dish. Not to mention the benefits of Lauki in help controlling cholesterol and blood sugar levels and maintaining a healthy heart. It’s also a rich source of Vitamin C K and Calcium and it’s also high on Water. I did it the ‘Maharashtrian’ way. Enjoy.

Steps

Cut Lauki in diced cubes. Soak moong dal in hot water and keep it aside. Cut onions, Chillies and tomatoes in small pieces chop coriander and keep it aside.

Heat Oil in non stick vessel. Add mustard seeds, Chillies, ginger garlic paste, curry leaves and sauté for 3 minutes on medium flame.

Add tomatoes, onions, turmeric powder, coriander powder, red chilly powder, ajwain and hing (Asafoetida) and sauté for 10 minutes.

Finally add moong dal and diced Lauki and mix properly. Add a glass of water and salt and mix again. Now lower the flame and keep the vessel covered for 15 to 20 minutes. Keep on stirring every 5 minutes. Check after 20 minutes if the Lauki is cooked you can switch off the gas. Garnish with chopped coriander. Serve hot with Roti or rice. Bon Apetiite.
