I just wanted some kick ass chicken curry. This is what I came up with.

I just wanted some kick ass chicken curry. This is what I came up with.
Steps

Add half vegetable oil to the pan. Add the sliced chicken to the pan. Sprinkle a small amount of salt and pepper over it and a generous amount of curry. Cook covered until the pink is gone from the chicken the transfer from the pan.

Add the chopped onion, remaining vegetable oil, ginger, generous amount of curry, and garlic in oil. Cook Covered until the onions are clear.

Add the chicken back to the pan with the onion mixture. Add the sugar, chicken broth, more curry and peas. Cook this covered for 5-10 minutes.

Once the chicken and peas are cooked through add the cornstarch, Yogurt, and cilantro to the mix. Cook this on low to desired thickness (max 4 minutes)

Serve alone or with rice. Best with Bastami rice.
