Ingredients

  1. 1 1/2 LBboneless chicken sliced in 1/4 inch strips
  2. 3 teaspoonsor curry powder
  3. pinchessalt and pepper
  4. 3 tablespoonsvegetable oil
  5. 1medium yellow onion diced
  6. 3 tablespoonsgarlic in oil
  7. 1 tablespoonground ginger
  8. 2 cupschicken broth
  9. 4 tablespoonsor cornstarch
  10. 2 teaspoonssugar
  11. desired amount of frozen peas (I used about a cup)
  12. 1/4 cupplain greek yogurt
  13. 1/4 cupchopped fresh cilantro

Steps

  1. 1

    Add half vegetable oil to the pan. Add the sliced chicken to the pan. Sprinkle a small amount of salt and pepper over it and a generous amount of curry. Cook covered until the pink is gone from the chicken the transfer from the pan.

  2. 2

    Add the chopped onion, remaining vegetable oil, ginger, generous amount of curry, and garlic in oil. Cook Covered until the onions are clear.

  3. 3

    Add the chicken back to the pan with the onion mixture. Add the sugar, chicken broth, more curry and peas. Cook this covered for 5-10 minutes.

  4. 4

    Once the chicken and peas are cooked through add the cornstarch, Yogurt, and cilantro to the mix. Cook this on low to desired thickness (max 4 minutes)

  5. 5

    Serve alone or with rice. Best with Bastami rice.
