Wash and soak rice for 20 to 30 minutes.

Heat ghee in a pan add bay leaf,cinnamon, cloves, green and black cardmom and saute till aromat.

Then add soaked rice saute well.

Then add 3 glass of water, when water become boil add salt and switch off the flame.

Drain water, fluff rice gently with fork and keep a side. (Don't throw drained water)

Now heat oil in a thick bottom pan add 1 roughly chopped onion, fry untill golden brown. Remove and keep a side.

In the same pan add cumin seeds, mint leaves, chopped green chilli, onion saute till translucent.

Add gngr-grlic paste and saute till row aroma goes off.

Then add tomato puree, saute well.

Then add turmeric powder, chilli powder, coriander powder and garam Masala powder and saute till oil separate.

Now add chopped carrot, capsicum, potato, peas and mix well.

Add drained water, sprinkle salt and cover lid to cook the veggies. Add exta water if require.

Then remove cooked veggies from pan, make a layer of rice, pour all cooked veggies, spread rice layer, add gravy cover lid and cook for 3 to 5 minutes on low flame.

Garnish with fried onion and serve hot with youghrt and papad..
