Ofe Achi or achi soup is an easy breezy Nigeria soup recipe that is commonly prepared with a variety of vegetables by the Eastern people of Abia, Imo and some part of Akwa Ibom states in Nigeria.

Ingredients

30mins
5-8 servings
  • 1 kgAssorted Goat meats
  • Okporoko (stockfish)
  • Smoked or Dried fish
  • Fresh yellow pepper (5)/ 1 tbs of black pepper
  • Salt
  • Onion
  • Seasoning cubes 2
  • Palm oil ( 2cooking spoon
  • Spicy like Uyaka and African nut meg
  • Ogiri (optional)
  • I handful of shredded Uziza leaves
  • Prewinkles I cup (removed ones)
  • 21/2 tablespoongrounded Achi
  • Grounded crayfish (2 tablespoon)

Steps

  1. 1

    Wash and combine the meat and stockfish I one pot and season with garlic, salt, pepper, oinions, and place on fire.

  2. 2

    Cook Meats till tender, then add enough water to cook soup thru, allow to boil.

  3. 3

    Add ogiri, Uyaka and Africa nut meg Spice, crayfish, smoked fish, pepper and remaining oinions stir and cook for 5 mins

  4. 4

    Add palm oil to the pot, add remaing cube and fresh pepper and cook for 10mins

  5. 5

    Add grounded achi, stir and adjust the thickness by adding water. (Only if necessary)

  6. 6

    Let the soup simmer on medium heat.

  7. 7

    Lastly add prewinkles and Uziza leaves allow to simmer on low heat for 5mins.

  8. 8

    Achi soup is ready.Put off heat and serve with Pounded yam, Fufu, Semo or wheat.
