Yaniqueques are Dominican Republic apple's eye. They sell them on the streets, and the best are found, when you visit Boca Chica, our famous beach at the capital. They make it with beach water.

Ingredients

6 servings
  1. 3 cupsall purpose flour
  2. 3/4 tspbaking power
  3. 1 1/4 tspsalt, plus salt to sprinkle when done
  4. 1egg
  5. 1 1/4 cupswater
  6. 4 tbspeanut oil
  7. 1 cupflour for working the dough, to sprinkle on the counter
  8. Peanut oil for frying

Cooking Instructions

    Mix the flour, baking powder and salt

    Start mixing while pouring the oil and water. Work the dough by hand, on a lightly floured surface. Open a hole in the dough and add the egg.

    Continue mixing and adding water (if it is dry) or flour(if it is sticky). Let dough rest for 1 hour covered with plastic film.

    Separate the dough on ping pong balls size. Extend with a rolling pin over a floured counter.

    Fry in peanut oil heated medium-high, until it gets browns, turning on both sides.

    Place over paper towel, served sprinkled with salt.
