When you truly love food,you want each and every mouthful to be a testament to that Love,that is what happened to me when my mother prepared some pilau at our home many years ago,I must have been 16.It stuck with me,I had to try prepare it at my home now that I am married with a child.Its a dish I always remember my mom with.That Mama's touch!Pilau remains one of my favourite meals,so I had to create my own recipe with a twist,whether in the ingredients or cooking method.I am very particular about My Pilau :) so it has to be really good :)

Ingredients

1 and half hour
serves 4 servings
  1. 1 kgBasmati Rice
  2. 1 kgMbuzi meat
  3. Dried Whole spices-Tbs-cardamom,cinnamon,cumin,cloves,nutmeg,fresh ginger,fresh garlic,coriander,red onions
  4. 1 tspGround pilau Masala or Ground spices above
  5. 1large Fresh tomato
  6. 1large fresh ginger
  7. 1fresh whole garlic
  8. 1large Red Onion
  9. Salt and pepper
  10. Cooking oil
  11. Stock from the boiled mbuzi

    Mbuzi Pilau.😋

    I like to use meat with abit of fat for pilau;be it beef,chicken or mbuzi.This is to give the pilau some flavour and to keep the pilau moist.
    Cut,wash and Boil your meat(I do this so I can get stock from the meat instead of using water in the pilau)-I will measure the stock in cups.

    So I know how much rice to add in.(e.g if my stock is 4 cups,I'll use 2 cups of rice).
    Boiling the mbuzi will also make it tender if it wasn't.

    Lightly toast the whole spices in the pan with no oil.
    Then grind them(use ground spices if you have).

    Separate the spices and use the ground ones-The aroma from these spices is amazing!

    Blend your ginger and garlic together.
    Fry the onions in a pan and add garlic/ginger mix above.

    Add the boiled Mbuzi in the spices mix and cook until nicely browned.
    Add your ground spices too and keep frying to mix well.

    Remember the stock from the boiled mbuzi?-Add it into the meat and season accordingly.

    Add the basmati rice into the mbuzi stew-There is an aroma basmati rice has that's very good with pilau however use any rice of your choice.Add Dania.

    Season stock well then add the rice.

    A trick I use when cooking pilau when I don't have charcoal-I cover the sufuria with a fitting pan and fill it with boiling water so the top cooks nicely and moist without burning.

    If you have charcoal,add a few hot coal on lid covering the pilau to cook the meal from the top.check often.

    Lower heat,cover and cook over low-medium heat.
    After 30 mins-Voila!
    Aromatic pilau!

    Pilau is delicious when moist,so keep an eye when cooking so it doesn't become so dry.

    Serve as desired with vegetables(I used tomato to help balance the spices) or a mild drink/just a glass of water.
