Ingredients

30 mins.
10 pancakes
  1. 4egg yolks
  2. 175 mL (3/4 cup)milk
  3. 250 g (1 cup)ricotta
  4. 100 g (7/8 cup)flour
  5. 1 tspbaking powder
  6. 1 pinchsalt
  7. 4egg whites

Cooking Instructions

    Add the egg yolks, milk and ricotta to a bowl.

    Add the flour, baking powder and salt to a mesh strainer. Sift it through to the bowl.

    Whisk the mixture.

  4. 4

    Whip the egg whites at the higher speed until fluffy like foam.

  5. 5

    Fold the egg whites into the mixture.

  6. 6

    Carefully lay out the pancakes on a hot pan (~7 on the conventional stove). Follow the regular pancake baking instructions for the rest.

    Add maple syrup or any other sweet substance to the pancakes, since the pancakes are sugar-free.
