Wash and soak the rice for 30 minutes.

Boil rice and Keep aside.Microwave grated carrots for about five minutes.

Colour small quantity of rice with green,orange food colour.

Dissolve Jaggery by adding little water and then microwave it for five minutes.

In a heavy bottom pan heat the ghee and add fennel seeds,melon seeds kernels chopped cashew nuts, raisins, almonds and coconut and stirfry for 1/2 a minute.Add grated Carrots.

Add dissolved Jaggery,mix well and add boiled rice except coloured rice.

Then cover the pan with the lid.
Let the rice be coated with Jaggery and all flavours cook on low flame.Switch off the flame.Add coloured rice. - 8
Transfer into serving plate.Garnish with some more chopped dry fruits.
