Ingredients

  1. 1large sweet potatoes boiled then cubed (2-3 cups)
  2. 2large bananas cubed
  3. 1/4 cupwheat Flour. I use glutten free flour instead
  4. 2 Tablespoonsmargarine (softened) or cooking oil
  5. 1 tablespoonsground cinnamon or ginger
  6. 2 teaspoonsbaking powder
  7. 1/2 teaspoonsalt
  8. 2Eggs
  9. Chocolate Chips (Optional)
  10. 1/4 cupsugar (OPTIONAL)

Steps

  1. 1

    Preheat oven to 350F. Generously grease a muffin pan with margarine or oil.

  2. 2

    In a food processor blend all ingredients until completely smooth. I don't use sugar thus a normal blender works for me. If you want to use sugar you may need to cream it first with a hand mixer.

  3. 3

    In case the mixture is too dense, you can either use water or a bit of milk.

  4. 4

    Scoop and fill the muffin Pan. Bake at 350F for 20 minutes or until done.
