Baked Appe Muffins

Appe are made of grain and lentil mixed fermented batter. These are fried and steamed cake similar to Idlis. Idlis are totally steamed but appe are cooked with oil. These are spicy and cooked in typical pan named Appe Pan/Appam Patra/Paniaram, containing deep round moulds similar to muffin pans. They are cooked in gas stove. I do not have appe pan. So thought of cooking it with a twist. I thought of making Appe in muffin tray and baking it in oven instead of cooking in oil. For creating the steam, I pour the batter in muffin tin and left one moulds empty. I half filled it with water, covered in with same sized cookie tray and baked it in oven. OMG!! It worked. The appe rose perfectly, flipped it and cooked again. I browned it more than usual appe as per my families liking. It was a heat. Sharing the recipe. So now if you do not have appe pan, then cook it in oven.
I have named it Appe Muffins..

Ingredients

  • Ingredints for Batter:
  • 1/2 cupUrad Dal
  • 2 tblspnChana dal , soaked in water for-1 hr
  • 11/4th cupFlat rice/, soaked in water for 15 mins
  • Methi soaked in water along with urad dal
  • 1 cupRice flour, soaked in 1 cup water for 15 mins
  • Vegetables:
  • 1/4th cupChopped onion
  • 2 tblspnChopped/grated carrots
  • 2 tblspnChopped green beans
  • 2 tblspnChopped bell peppers
  • 1/4th cupChopped coriander
  • to tasteSalt
  • Tampering:
  • Bunchcurry leaves
  • 2 tbspnChopped green chilli
  • 1 tspnMustard seeds
  • 1 tspnCumin seeds
  • 2 cut 1:4Whole dry red chilli
  • 2 tblspnOil for Tadka/Tampering
  • 2 tblspnOil for greasing the muffin/appe pan

Steps

    Make the Batter:
    Grind all the soaked ingredients one by one. Now mix everything with rice flour and again grind all together to make a fine batter.
    Ferment this batter in a bowl with tight lid at least for 8 hrs or till it gets fermented nicely.

    Add all other vegetables in the batter. Add salt and chopped coriander. Mix the batter well.

    Tadka/Tampering: In a pan heat oil for Tadka. Add whole red chilli cumin seeds and mustard seeds. Let it splatter. Add curry leaves. Fry for a second. Add onions. Stir till just translucent. Cool a little then add to the fermented batter.

    Baking:
    Pour ½ tspn of oil in all moulds. Then pour the batter in the mould till neck. Half fill one mould with water. Cover the muffin tray with same sized tray like a lid or with silver foil covered from all side.
    Pre heat oven in 200degrees for 10 min.
    Bake the appe covered for 15 mins. Take out the tray.

    Flip the appes and bake again for 5-7 mins or till all are cooked. Take off the lid/cover.
    If you wish to brown the appes then bake it open for 3-4 min in hot oven.

    Appe are ready to serve. Best paired with coconut chutney.

I didn’t understand how to add water in the mould? is it half fill with batter and half with water in each mould or just fill some empty moulds with water to create steam inside?can you please explain?
