Ingredients

  • 4-6 cupsfrozen cauliflower
  • Halfa brick of cream cheese
  • 6 stripscooked bacon
  • 1 cupColby jack cheese
  • 1/2 cupminced onion
  • 3-4 clovesminced garlic
  • to tasteSalt and pepper

Steps

  1. 1

    Boil cauliflower until fork tender set aside

  2. 2

    Preheat oven at 400

  3. 3

    Caramelize onion and garlic in a skillet.

  4. 4

    Add onion, garlic, cooked bacon, cheese, salt and pepper to taste to softened cream cheese. Thin out with milk of necessary.

  5. 5

    Mix in cauliflower

  6. 6

    Add to oven safe casserole dish. Top with colby jack and bake until bubbly.
