Ingredients

  • Тесто Dough
  • 1/2ст сыворотки или тёплой воды. 1/2 c of warm water or milk
  • 1ст кефира 1 c of kefir
  • 1ч. л. Соли. 1 tsp salt
  • 3ст. л. Сахара. 3 tbsp sugar
  • 2ст. л. Крахмала любого. 2 tbsp corn or potato starch
  • 1ст.л. Дрожжей. 1 tbsp instant yeast
  • 3яйца. 3 eggs
  • 100гр масла комнатной температуры. 1 stick of soft butter
  • 600гр муки или сколько пойдёт, тесто не должно быть крутым. 2,5 c of flower or more, the dough should be on a soff side
  • Начинка. Filling
  • Пирожки. Pirogies
  • 4отваренных вкрутую яйца. 4 hard boiled eggs
  • 1-2пучка зеленого лука. 1-2 bunches of scallions
  • Рогалики. Rolls
  • 200гр сулугуни. 1/2 pound of shredded hard mozzarella
  • 200гр домашнего сыра (см. рецепт). 1/2 pound of home made cheese or Friendley’s ricotta cheese

Steps

    Тесто: смешать все ингредиенты кроме масла, когда тесто начнёт принимать форму вмесить кусочки масла. Дать тесту подойти в течение часа при комнатной температуре. Через час перемесить тесто, к этому времени не только тесто поднимется, но и масло растает. Тесто будет очень эластичным и мягким. Оставить подходить ещё на час. Готовое тесто разделить на две части: из одной части сделать пирожки из другой рогалики.

    Dough: Mix all the ingredients except butter, when the dough begins to take the form knead in the soft butter. Let the dough rise for one hour at room temperature. After an hour, knead the dough, by this time not only the dough will rise, but the butter will also melt. The dough will be very elastic and soft. Let the dough rise for another hour. The finished dough is divided into two parts: from one part to make pirogies, and from the other part make rolls.

    For rolls, divide the dough into desired pieces. Roll each piece into an oval. On the sharp edge of the oval, put two full tablespoons of cheese filling, wrap a piece of cheese and press down the edges so that the cheese is closed. The rest of the dough, either cut into strips, or with a knife make cuts to make lattice. Then wrap the piece of cheese in the cut-through part of the dough and roll up.

    Put the pies and rolls on a baking sheet, brush with a mixture of eggs and vegetable oil and put into the oven preheated to 200C. Bake until golden brown. Put the finished patties on the baking rack and cover with a linen towel to cool completely.

    Для рогаликов разделить тесто на желаемые кусочки. Каждый кусочек раскатать в овал. На острый край овала положить две полные столовые ложки сырной начинки, завернуть часть с сыром и придавить края чтобы сыр был закрыт. Оставшуюся большую часть теста либо порезать на полоски, либо ножом сделать прорезы, чтобы получилось кружево. Затем завернуть часть с сыром в прорезанную часть теста и свернуть калачиком.

    Выложить пирожки на противень, смазать смесью яйца и постного масла и поставить в заранее разогретую до 200С духовку. Выпекать пока не подрумянятся. Готовые пирожки выложить на пекарскую решетку и накрыть льняным полотенцем до полного остывания.
