Ayam Kalio is not the same as Rendang. 😙 Ayam Kalio Padang resemble Gulai Ayam but has a thick Gravy (kuah kental), while Gulai Ayam Padang has a thin gravy. Suitable to be eaten with a side dish Ketupat (pressed cooked rice).🇮🇩

Ingredients

6 persons
  1. 1whole Chicken 2kg cut into 10 big pieces
  2. 1Lemon juice
  3. 1/2 kgpotato peeled, slice thickly like a biscuits
  4. 1big Onions (100g), chopped finely
  5. 8shallots
  6. 7 clovesGarlic
  7. 5Candle Nuts/Macadamia (Kemiri)
  8. 6 cmfresh Ginger, sliced thickly on top leaving the base intact
  9. (when the dish is cook, then it's easily to discard this ginger)
  10. 6 cmfresh Galangal,slice thickly on top leaving the base intact
  11. (or 1 tbs ground Galangal/Lengkuas powder)
  12. 15fresh Red Chillies, pounded into paste
  13. 5Bay Leaves (daun Salam)
  14. 2Curry Leaves (see image)
  15. 2Lemongrass stalks,bruised the white part,tied up the top green
  16. 5Kaffir lime leaves, teared the sides leaves to loosen the oil
  17. 1tsb groundTurmeric powder(Curcuma) (no need of fresh Turmeric)
  18. 1 tspground Coriander powder or 1 tbs whole Coriander
  19. 1/2 tspground Cumin powder
  20. 1 tbsTamarind paste or 2 tbs Tamarind juice
  21. 2 Tbssoft Brown Sugar or Palm sugar crushed
  22. 1 canCoconut Cream or 1 lt. Coconut liquid from Coconut fruit
  23. Water parboiled from the kettle
  24. Vegetable Rice Bran Oil
  25. 1 1/2 tspsalt
  26. Black pepper grinded
  27. On top centre: w Coriander leaves,the stalks are nice to eat too
  28. To serve: steamed Jasmine Rice cook in Rice Cooker or
  29. 4Ketupat cakes (pressed cooked rice)(see image):
  30. Rice boiled in square shaped packet of plaited Coconut leaves
  31. Prepare: On top of individual plate put a soft large banana leaf

Steps

    Wash the chicken, marinade with lemon juice. In a blender put the shallots,garlic,candle nuts,fresh chillies,the whole coriander to making a chillies paste mixture.In a wok on put oil,heat oil then add the chopped onion & stir fry 5 min,add the chillies paste &fry more 2'.Then put the Coconut cream, boil for 5' till bubble then add 5cups water,turmeric,coriander powder(if not using the whole one),gallangal, lemongrass,bay leaves,curry leaves,kaffir lemon leaves,tamarind paste,sugar: mix all

    Add the chicken, stir till change colour. Put the coconut milk, cook and stir. Stir constantly to avoid the coconut cream be separated and let slowly to boil then add the sliced potatoes, salt and grinded black pepper, keep stirring and mix starting to boil.

    Then lower down the temperature. Simmering on low temperature. Next taste tge season and if necessary to add tamarind paste & sugar a little more, and mix until smooth. Put the lid on. If lack of liquid, add more water from the kettle.

    The chicken is cook when change into brownish colour&the sauce is thick&abundant,it taste delicious.Turn off the fire,transfer.On top centre decorate with bunch of Coriander leaves that have delicious flavour or sprinkle with fried onion.😚To serve: pour the gravy sauce, the cooked meat & potatoes over the Ketupat (cut roughly into bite pieces) or on the hot Steamed rice placed on a plate which base is covered with soft banana leave(to soften the banana leaves is to put them on the gas fire).

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking. Sorry as a minang kabau People or padang people ,just letting u know that is not kalio ayam but just called gulai ayam because theres missing ingredient which make it different between gulai ayam and kalio ayam :)original kalio ayam color is light brown
