Ingredients

  1. 3-4capsicums
  2. 2large potatoes, boiled and mashed
  3. 2-3 clovesgarlic crushed
  4. 1/2 cupboiled rice
  5. 1/2 cupcherry tomatoes, halved, or chopped tomatoes
  6. 1/2 cuppitted black olives, diced
  7. 1/4 cupfreshly chopped Basil/mint
  8. 1 tspgaram masala powder
  9. 1/4 tspred chilli powder
  10. 2 Tbpumpkin/ sunflower seeds/melon seeds
  11. to tasteSalt
  12. 2 tspolive oil

Steps

  1. 1

    Dry roast the seeds with a pinch of salt in a Kadahi/wok. Keep aside.

  2. 2

    Heat 1 tsp olive oil in a pan. Add chopped garlic and roast it till slightly brown. Add mashed potatoes and cook with garlic for 5 minutes on low heat.

  3. 3

    Add salt, garam masala and mix well. Turn off the heat and add tomatoes, rice,olives and herbs. Let it cool.

  4. 4

    Stuff the slit peppers with the above mixture. Brush 1 tsp olive oil in a pan. Gently place the peppers with stuffed side up, in the pan. Cook covered for 5 minutes or till slightly tender on medium heat.

  5. 5

    Remove the cover. Sprinkle the roasted seeds and red chilli powder on top and cook without lid till crisp from under. Serve hot.
