Chili Mango Chicken Stir-fry

Ingredients

4 servings
  1. 1 lbboneless skinless chicken, thinly sliced
  2. 2 Tbspdry sherry, divided
  3. 2 tspsoy sauce, low sodium
  4. 2 tspcornstarch, divided
  5. 1 tspsalt, divided
  6. 1/3 cupchicken broth, low sodium
  7. 1 Tbspsriracha
  8. 1 Tbsppeanut oil (substitute sesame oil if needed)
  9. 3quarter size pieces of ginger root (peeled and smashed)
  10. 2 cupsgreen bell peppers, chopped
  11. 1 cupred bell peppers, chopped
  12. 1large mango, 1/2 inch slices

Cooking Instructions

  1. 1

    Mix: 1 Tbsp sherry, 2 tsp soy sauce, 1 1/2 tsp cornstarch, 1/2 tsp salt. Coat chicken and set aside

    Mix: chicken broth, sriracha, 1 Tbsp sherry, 1/2 tsp cornstarch. Set aside

  3. 3

    Heat skillet or wok over high heat. Add oil, then ginger - stir-fry until fragrant

  4. 4

    Add chicken, cook until no pink remains but chicken should not be done

  5. 5

    Add bell peppers and 1/2 tsp salt, let cook 1-2 minutes

  6. 6

    Stir broth and add to wok stir-fry 1-2 minutes or until chicken is cooked through

  7. 7

    Remove from heat mix with mango

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more.
