Ingredients

  1. 1 tbspghee or oil
  2. 1 tspcumin seeds
  3. 1onion, chopped
  4. 4 cmchunk ginger, peeled and grated
  5. 3-4 clovesgarlic, peeled and crushed
  6. 1red or green chilli, chopped finely
  7. 1 tspgaram masala
  8. sea salt and black pepper
  9. 1/2 tspground turmeric
  10. 1/2 tspchilli flakes
  11. 1 1/2 cupspotatoes, cut into chunks
  12. 1/2-1 cupcarrot tops, chopped
  13. 1 cupcarrots, sliced
  14. water
  15. baby spinach

Cooking Instructions

    Heat the oil in a pan (with a lid for later). Add the cumin seeds.

  2. 2

    When the cumin seeds start to pop, add the onion. Cook until the onion softens.

  3. 3

    Add the garlic, ginger, chilli and spices. Season. Cook for a few minutes.

  4. 4

    Add the potatoes and most of the carrot tops. And 1 cup of water. Stir well. Put the lid on and simmer for about 10 mins. Add more water if it starts to dry out.

    Add the carrots and 1/4 cup of water. Cover again and cook for 3-5 minutes until everything is tender.

  6. 6

    Take off the heat. Stir in a tsp more ghee/ butter and the spinach and the rest of the carrot tops.

  7. 7

    Serve with a garnish of chilli/ coriander leaves/ more carrot tops 🥕 Enjoy 😋
