Aam Chunda or Sweet Mango pickle

This is an instant, easy and tasty Aam Chunda recipe. It is a sour and sweet mango preserve made with raw unripe mangoes , sugar, jaggery and spices. Kids love this sweet and Sour Chunda very much. When I was kid , I enjoyed this delicious Chunda with Paratha or Puri or sometime with biscuits also . Do try this you will surely love it.

Cooking Instructions

Wash and pat dry mangoes or you may place it under sunlight for 20-30 minutes. Make sure, no moisture is left in mangoes.
Further, peel and grate it with grated. - 2
Heat a heavy bottom pan or kadhai, add grated mango, sugar, jaggery, salt and turmeric. Keep the flame on low. Stir often so that the sugar does not crystallize and keep on simmering the mixture. When mixture will begin to thicken.
Add Cummin, fennel, cardamom and cinnamon powder. Mix all together. - 3
When the consistency of the sugar reaches a 2 thread consistency. Switch off the flame. If you cook more, then chunda will become dense and hard. The consistency should be like a jam consistency and look translucent.

Once Chunda cooled, spoon mango chunda in a clean sterilized glass jar or bottle. It stays good for more than 6 months in the fridge and about 15 to 20 days at room temperature.
