Medu Vadas or Mendu Vada or Indian Savoury Doughnuts are one of the most loved South Indian Breakfast item. These are originally made with Black Gram Lentils or Urad daal. But over the Years, there have been umpteen number of variations introduced by many people across the Country.
Absolutely tempting and easily done, these are perfect for Iftaar meals and Tea-time as well.
Though I had made a lot of variations to date, I always end up with a new twist each time. I just love the instant ideas that come in my mind. It's spontaneous. Not at all pre-planned nor pondered upon a lot. These ideas are the best when put into action.
Therefore I try and do a little bit of innovation always. And trust me guys, this works out well and the Medu Vadas turn out scrumptiously delicious each time.

Cooking Instructions

Soak both daals for at least 5 to 6 hours. Or better still overnight. I usually do that to maintain the spongy and super soft texture of these awesome-looking Vadas. Never add too much water while grinding. When the Lentils are soaked well, they don't require much water at all. That's the secret to fluffy and spongy Vadas.

If the batter is semi-thick or watery, the Vadas don't hold shape and even tend to absorb Oil. They just get drenched in Oil. Now we don't want such type of Medu Vadas. Right folks? So soak the Lentils for a good amount of time and then grind to a smooth and fluffy batter.

Also, add the rest of the ingredients to the batter and mix well. Heat oil in a Kadai. Take a Lemon sized lump of the batter and shape it into a Medu Vada making a hole in the center with your thumb. (Grease your palms a bit with Oil or just plain water). Slide carefully into the hot oil. Keep the heat to a low as you slide them. Increase it afterward to medium-high heat to high heat as needed.

Deep fry them by changing the sides and keeping a watchful eye on them. They get done very easily and quickly too. Serve them piping hot with any Chutney of your choice. Enjoy!
