When I’m not feeling very well, udon is always my first choice.
Cooking Instructions

Boil plenty of water in a pot and cook udon according to your package instructions.

While cooking udon, prepare udon soup in a separate pot. Put Dashi packets in water and simmer under low heat. Remove Dashi packets after few minutes and add soy sauce, mirin and Sake. Add chicken and spring onion.

Once udon is cooked, drain water and rinse them well under running water to remove surface starch. Place udon in bowls and pour the soup and ingredients.
