Ingredients

20 minutes
1-2 servings
  1. Boiling pasta
  2. 4 cupswater
  3. 1 cuppenne pasta
  4. 1/3 Tspsalt
  5. 1 cupcold water (to rinse)
  6. Other ingredients
  7. 1.5 tspoil
  8. 1 Tspminced garlic
  9. 1 Tbspchopped onion finely
  10. 2 tbspsweet corn
  11. 1/2carrot,finely chopped
  12. 2 Tbspgreen bellpaper finely chopped
  13. 1/4 Tsppeppercorns (crushed)
  14. 1/3 Tspmixed herbs
  15. 1/4 Tspchilli flakes
  16. salt as required
  17. Vegetable mayonnaise as required

Cooking Instructions

20 minutes

    In a wide pan boil 4 cups water along with 1/3 Tsp salt.
    Add 1 cup of penne pasta and stir well.
    Boil for 7-9 minutes.

    Drain off the cooked pasta and pour 1 cup cold water to stop the cooking process.

    Then in a large pan heat 1.5 Tsp oil and saute the minced garlic. Saute onion until they shrink slightly.

    Then add chopped carrot, sweet corn and green bellpaper.
    Stir fry for a minute keeping veggies crunchy.

    Next add group black peppercorns, mixed herbs, chilli flakes and salt. Give a good mix. Add 2 Tbsp leftover pasta water. Also add 2-3 Tbsp vegetable mayonnaise.

    Now stir and combine keeping the flame low and not boiling the mayo. Add boiled penne pasta and mix well. The mayonnaise should be coated on pasta evenly.

    Serve hot or cold mayo pasta with extra topping of chilli flakes and cheese
