Ingredients

  1. 2 cupscorn kernels
  2. 3 tbspoil
  3. 1” piece of cinnamon
  4. 4-5cloves
  5. 2whole red chillies
  6. 1 tspmustard seeds (sarson)
  7. 1/4 tspasafoetida (hing)
  8. 1 tbspsesame seeds (til)
  9. 1-2chopped green chillies
  10. 1/2” piece of ginger chopped
  11. 1 sprigcurry leaves
  12. 1/4 tspturmeric powder (haldi)
  13. 1 tspsalt or to taste
  14. 1 cupmilk
  15. 1 tspsugar
  16. 1 tbsplemon juice
  17. 2 tbspchopped green coriander leaves

Cooking Instructions

    To begin, prepare the corn. Keep aside 3 tbsp corn kernels and coarsely grind the rest. If using fresh corn, boil and grate them.

    Heat oil in a pan. Traditionally, peanut oil is used. Since my kitchen is a nut-free kitchen, I am using sunflower oil.

    Add cinnamon, cloves, red chillies broken into two, mustard seeds, and asafoetida (hing). Add sesame seeds and mix well. Allow the mustard seeds to crackle and sesame seeds to pop.

    Next, add chopped green chillies, ginger, and curry leaves. Mix well.

    Now, add the ground corn with salt. Cook for a few minutes.

    Add the milk. Mix well. Cook for a few minutes.

    Add sugar and corn kernels. Mix well. Cover and cook until the liquid dries up, the corn is done, and the mixture is nice and creamy.

    Turn off the heat. Finish with lemon juice and chopped coriander leaves. Mix well.

    The Makai No Chevdo is ready to serve. Garnish with coriander leaves and serve hot.
