Veggie Peanut Salad

Here veggies are frozen , you can have partially cooked and with peanuts it will enhance the flavor and give a good crunchy flavor.

Here comes the healthy, yummy and some light options. Get bored of simple salads. Though salads are full of nutrients.
Here veggies are frozen , you can have partially cooked and with peanuts it will enhance the flavor and give a good crunchy flavor.
Steps

Roast peanuts and crush few of them and keep aside.

In a pan take some water(1/2 cup), heat it and as it starts boiling add veggies (if not frozen)to this and cook it for 8-10 minutes or till all the water gets evaporated.

Transfer these cooked veggies in a bowl, add chopped cucumber, tomato, spring onions, iceberg, green chillies, roasted peanuts and lemon juice.

Take another pan, add a teaspoon of oil to this once it is heated add mustard seeds, pinch of hing and curry leaves add this mixture to your salad.

Now add crushed peanuts, salt and lemon juice to this, mix it well and enjoy it.
