Ingredients

  1. For Protein Balls Mixture:
  2. 1small Onion (40 g)
  3. 1/2Carrot (35 g)
  4. 1/4Green Bell Pepper (35 g)
  5. Small handful Fresh Coriander Leaves (20 g)
  6. 100 gOrganic Sweet Potato, steamed, peeled & grated
  7. 100 gFresh Paneer, crumbled
  8. 2 tbspSattu Flour (25 g)
  9. 3/4 tspSalt or to taste
  10. 1 tspOrganic Coriander Powder
  11. 1/4 tspSpicy Red Chili Powder
  12. For Protein Salad:
  13. 150 gHung Curd
  14. 100 gEnglish Cucumber, peeled & grated
  15. 1/4 tspPizza Oregano Spice Mix
  16. 1/2 tspMexican Seasoning
  17. 1 tspFresh Coriander Leaves, chopped
  18. Salt to taste
  19. For Cooking:
  20. 1 tspOil (for Appe Pan)
  21. For Topping:
  22. 7-8Thinly sliced cucumber
  23. leavesCoriander

Cooking Instructions

    Prepare Hung Curd

    Use a hung curd maker, muslin cloth, or fine strainer. Chill until ready to use.

    Steam and Grate Sweet Potatoes

    Steam, cool, peel, and grate sweet potatoes. Set aside.

    Chop Veggies

    In a chopper, add onion, carrot, bell pepper, and coriander leaves. Finely chop together.

    Make Protein Balls

    In a bowl, mix chopped veggies, crumbled paneer, grated sweet potato, sattu, and spices. Combine to form a dough. Shape into small balls.

    Cook in Appe Pan

    Heat appe pan with a few drops of oil in each cavity. Place balls, cover and cook on low flame for 6–8 mins until golden. Flip and cook the other side until golden. Remove and set aside.

    Prepare Protein Salad

    Mix hung curd, grated cucumber, pizza oregano, Mexican seasoning, chopped coriander, and salt.

    Assemble

    In a wide bowl, spread the Protein Salad. Arrange Protein Balls around it. Garnish with cucumber slices and coriander leaves.
