  12. 2 tspsalt
  13. 1 tspturmeric
  14. 4 Tbsghee
  15. 1/2 tspasafoetida
  16. 1 tspcumin seeds
  17. 2 tbsgreen coriander leaves, chilli
  18. 1 tbsred chilli powder
  19. 1 tspginger
  20. 1 tspgaram masala powder
  21. 3 cupcoarsely ground wheat flour (gheu ka mota atta)
  22. 1 cupwheat flour (normal gheu ka atta)
  23. 2 tablespoonghee for(moin) kneading the dough
  24. 3 cuppowder sugar (Bura)
  25. 1/2 cupdryfruites
  26. 1 tspgreen cardmom powder
  27. 5-7red chillies
  28. 10-15 clovesgarlic
  29. 1/2 tspsalt
  30. 1 Tbsoil
  31. 1 tbskachri or amchur powder
  32. 1 TSPkasmiri mirch Powder
  33. 8-10green chillies
  34. 1/2 tspsalt
  35. 1/4 tspturmeric
  36. 1/2 tspcoriander powder
  37. 1/4 tspfennel powder
  38. 1/2 tspamchur
  39. 1/8 tsphing
  40. 2 tspoil

Cooking Instructions

  1. 1

    Red chilli chutney --First wash and red chillies,and cut,Add lahsun, salt, red chilli powderand grind coursely

    ,Now put kadai on the gas add oil heat it and put garlic paste and fry for some time add chillies paste and fry till oil separat approx7,10 minutes
    Add amchor or kachri powder
    Remove from gas let it cool.

    Green chilli tipore-Heat oil in pan add hing,souf,jeera,,Rai kalungi, add Green chillies, Turmeric coriander powde salt,amchoor
    1,2Tbs add water Cook

    Churma-Mix coarsely ground wheat flour / semolina & normal wheat flour & add 2 tablespoon of warm ghee to it. Mix it and make stiff dough using water.. Make muthiya of this dough and deep fry all the puris to golden brown or cook in tandor colour on medium flame.
    Now take muthiya break them into pieces grind it into fine powder or churma,.. Add this sugar cardamom powder in churma
    Now add ghee in a pan.
    Saute nuts for 2-3 minutes and add in it
    You may add mawa too

    For Baati
    · In a large mixing bowl add all ingredients, mix well making sure the dough is moist.
    Now add water and knead it into a semi hard dough.
    Let it rest for 20 minutes
    Take a small ball sized dough and mame thumb impression in between bati
    · Pre heat gas tandor for 5 minutes
    · Place the bati Cook for 30to40minutes on both the sides
    now dip the bati in ghee for some time.

    For Dal:
    Wash all the dal and soak for half an hour.
    cook these dals with fresh water, turmeric and salt on medium flame for 3-4 whistles.
    Turn off the flame and let the cooker cool

    Baghar,,,Heat ghee in a kadai, add asafoetida, cumin seeds, let them splutter, add red chilli powder add into daal add ginger green coriander leaves green chilli

    Our daal baati churma thali ready to serve
