Vickys Mexican-Style Roast Pork GF DF EF SF NF
Roast pork is our staple Sunday dinner but it's never boring as I season it in many different ways. My Asian rub is very popular with the children but this is too as long as I don't add any extra chilli powder! If you don't like any heat just leave out the chilli and cayenne. The marinade is delicious either way!

This is a simple roast pork recipe with a raspberry sauce to change it up from the usual apple or cranberry. Don't over simmer or add too much cornstarch or it'll be like eating jam rather than sauce

My herb garden is doing really well this year - in particular, the rosemary bush. I replanted it in another area of my garden and it's definitely loving the new spot. Lots of people plant herbs for decoration but mine are certainly for cooking with! This recipe requires a marinade time of 3 hours but then only takes 10 - 20 minutes to actually cook

Vickys Italian Sausage Seasoning plus Recipe Idea GF DF EF SF NF
Italian Sausage is just a sweet and spiced sausage but the seasoning mix lends to many dishes. This whole batch of seasoning will transform 2 pounds of minced meat (pork, beef and turkey are fantastic) and you can then use the seasoned meat for making lasagne, spaghetti bolognese, meatloaf, meatballs or burgers. The dry mix can be stored by itself and added as a seasoning as directed below or a 2 pound batch of minced meat can be prepared with the whole mix then frozen into portions. As always, add more or less of each ingredient to suit your own taste!

Vickys Hidden Vegetable Pasta Sauce, GF DF EF SF NF

Vickys Homemade Onion Pilau Rice, GF DF EF SF NF
I'm a huge believer in microwaveable rice, especially when it's a side for something that cooks quickly such as a frying steak or fish. There's no point spending all that cooking time on something that can be on the table in 10 minutes! But when it's something slowcooked, well you may as well make it yourself! You can start this rice an hour before your curry is ready to serve and it goes perfectly with a tikka, korma or a balti!

Vickys Greek Seasoning GF DF EF SF NF
On the old AllTheCooks site before Cookpad took over, there was a great Greek seasoning recipe that I loved. I linked it to a few of my Greek style recipes but the links are now gone too so I'm posting my slightly improved version so everyone can still enjoy it
