Ingredients

  1. 3 clovegarlic, crushed
  2. 1 tbspolive oil
  3. 1/2green pepper, chopped
  4. 1onion, chopped
  5. 32 ozchicken broth
  6. 1carrot, chopped
  7. 8 oztomato sauce
  8. 1/4 cuprice
  9. 2 cupwater
  10. 1/2 tspcumin
  11. 2chicken breasts
  12. 1/2 tspchili powder
  13. 1/2 tspcelery seed
  14. 1/2 tsppepper
  15. 1/2 tspsalt
  16. 1Mexican blend shredded cheese

Cooking Instructions

    In stock pot, heat oil over medium high. Add onion, green pepper, carrot, and garlic. Saute until tender, about 10 minutes.

    Add remaining except cheese and bring to a boil. Reduce heat and simmer, covered, until chicken is cooked, about 20 minutes.

    Remove chicken from pot. Shred, and return to pot.

    Serve with a sprinkle of cheese.
