  3. 1 cupFresh corn
  4. 3Shredded carrots
  5. 3 tbspCreamy peanut butter
  6. 1 1/2 tspSiracha
  7. 4 tbspCoconut milk
  8. 1/2 tspSesame oil
  9. 1/2 tspOlive oil
  10. 1/2 tspApple cider vinegar
  11. 1/2 tbspMaple syrup
  12. 1/2 tspGrated ginger
  13. 1 pinchSalt
  14. 8Shrimp
  15. 2 cloveGarlic
  16. 1 tbspChopped fresh basil
  17. 2Limes

Cooking Instructions

  1. 1

    Mix kale, corn, snow peas & carrots

    Whisk ingredients 5-13. Toss with veggies.

    Mix shrimp with garlic, sesame oil, lime juice, siracha, basil, salt, pepper, & sesame seeds

    Sautee shrimp in sesame oil 1-2 minutes each side on med-high heat.

    Top salad with shrimp and squeeze fresh lime.
