Ingredients

3 servings
  1. 1/2 tbspCanola oil
  2. 1 smallgarlic clove
  3. 1/4 tspChipotle chile power
  4. 1 dashSalt
  5. 1/21/3 cup water
  6. 1/215oz can organic black beans, drained
  7. 1/215oz can organic kidney beans, drained
  8. 1 1/2 tbspFresh salsa
  9. 310in reduced fat tortillas
  10. 1/2 cupReduces fat 4 cheese Mexican blend cheese
  11. 3/4 cupChopped plum tomato (about 1.5)
  12. 3/4 cupShredded romaine lettuce
  13. 3 tbspThinly sliced green onions

Cooking Instructions

    Heat oil in lg nonstick pan over med heat. Add garlic, cook 1min stirring frequently. Stir in chile powder and salt, cook 30 seconds stirring constantly. Stir in water and beans, bring to a boil. Reduce heat and simmer 10mins. Remove from heat, stir in salsa. Partially mash bean mixture with a fork.

    Warm tortillas according to directions. Spoon 1/3 cup bean mixture into middle.
