Chicken and spinach enchilada dinner casserole

Ingredients

  1. 2-3boneless skinless chicken breast, cooked & shredded
  2. 1onion, chopped
  3. 1 cancream of mushroom soup
  4. 1 cancream of chicken soup
  5. I can Rotel, with lime & cilantro
  6. Fresh baby spinach
  7. 3-5 clovesgarlic, minced fine
  8. 1 tbsp.cumin
  9. Shredded jack or cheddar cheese, enough to cover the top of dish
  10. Corn or flour tortillas, I thought I had corn but I had flour. Worked very well

Cooking Instructions

  1. 1

    Mix shredded chicken, the soups, the Rotel, onion, cumin, & garlic, in a large bowl. Spray cooking spray in a large Pyrex baking dish.

    Put one third of mixture in the baking dish then layer the tortillas,chicken mixture, & spinach, repeat till all mixture is used. Top with cheese. Bake at 350 degrees for 30 minutes.
