Mash the pre boiled potatoes in a bowl

Add the chopped green pepper and onions to the minced meat and boil for 5 minutes. Then add one egg to the mixture to bind the mixture.

Prepare the breadcrumbs and whisked eggs

Take the mashes potatoes in your and press it flat then add the minced meat and wrap making a ball.

Then flour it. After that dip in the eggs and then bread crumbs

Deep fry in the cooking oil till golden brown

Serve with kachumbari

To be honest, I was going to make some empanadas, but I started doing some silly things since I got this mixer for Christmas. I ended up making dough and thought a pot pie would be better. I’m not going to lie, I thought I ruined this in the last stages... but remarkably, it came out reasonable. (If using a cast iron skillet, I would recommend increasing the crust measurements by 50%. Better to have too much dough than not enough).
