Tuna Pasta Salad

This is my go to for a hearty pasta salad when I'm craving one that's not made with a creamy base. The tuna packs it with protein and I use whole grain pasta to up the nutrition and to make it a bit more filling. A serving of this with some fresh fruit will keep you full until dinnertime.

Ingredients

3 servings
  1. 1 cupwhole wheat pasta (shape of choice)
  2. 1 cupfrozen peas
  3. 1large carrot, peeled and shredded
  4. 1 can (5 oz.)tuna, drained and flaked
  5. 2 tbsp.finely diced red onion
  6. 2 tbsp.extra virgin olive oil
  7. Juice from 1 small lemon
  8. 1/4 tsp.each salt, pepper, salt free all purpose seasoning

Cooking Instructions

    Cook the pasta according to package directions. In the last two minutes of its cook time, stir in the peas. Drain in a colander and rinse with cold water.

    In a large bowl, combine the pasta, peas, carrots and onion. Drizzle in the oil and lemon juice, then add the seasonings. Toss it all together, then stir in the tuna, so it stays in larger chunks.

    That's it! Let it chill in a covered container in the fridge until you're ready to eat. This will keep in the fridge for 4-5 days.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights.
