White beans and farro stew (vegan)

Needed a recipe to use my mustard leafs. Wanted it to be vegan. Came up with this 😊 Pretty happy with the result 😊
I guess you could use any greens, any light colored beans and any grains that need a 2/1 ratio to cook.

White bean stew! White bean stew!
First day of spring, but here in Connecticut, today doesn’t really feel like it…I’m bringing you a traditional Spanish stew, perfect for cold winter days. I’ve known this dish since I was little—it was always in my home! 🥰It’s very easy to make and packed with flavor!Plus, white beans are rich in fiber (over 21gr per 100gr), which helps regulate digestion. They’re also a great source of B vitamins, especially folic acid, and minerals like potassium, calcium, phosphorus, magnesium, iron, and zinc. Chus Molinero -

Being a cook is being an artist —You can mix ingredients in your fridge or pantry and get creative results! I had some chickpea cans I wanted to use and I decided to make this vegetarian strew which turned out delicious ! I used vegetables I had in my fridge and you can too! You can substitute the green peppers for red/orange/ yellow or add any vegetables you already have like celery or carrots. The important thing is that you make it with love and you get creative while doing it. Veggie K -
