Needed a recipe to use my mustard leafs. Wanted it to be vegan. Came up with this 😊 Pretty happy with the result 😊
I guess you could use any greens, any light colored beans and any grains that need a 2/1 ratio to cook.

Ingredients

3 servings
  1. 2 tablespoonextra virgin olive oil
  2. 1red pepper, diced
  3. 1zucchini, diced
  4. Halfonion, diced
  5. 4 cupsmustard leafs, chopped
  6. 1 cupfarro
  7. 1 tablespooncumin powder
  8. 1 tablespoonbaharat spice mix
  9. to tasteFresh groupe black pepper
  10. 2 cupswater
  11. Halflemon, juiced
  12. 1 canwhite beans, rinced

Cooking Instructions

    Heat up the olive oil in a large pan.

    Add in the red pepper, the zucchini and the onion. Cook for a couple of minutes, stirring constantly, till onion gets transparent.

    Lower the heat to medium, add in the mustard leafs little by little and cook till they start to wilt.

    Add in the spices and the farro. Cook for a couple of minutes, stirring constantly.

    Add in the water and the lemon juice, lower the heat again, cover and simmer for 20 minutes, stirring once in a while.

    Add in the white beans, mix well, cover and let simmer for another 10 minutes.

    Remove from heat, stirr one last time, cover and let stand for 5 minutes.

    Serve in a bowl with crusted bread.
