Spaghetti frittata

Wonderful lunch! Even breakfast if you fancy it, you can reheat it :) This is a dish from Naples. Heaven on a plate #italian #spaghetti #pasta
Cooking Instructions

Bring water to the boil. Add salt. Cook pasta. Drain 1-2 mins before cooking time is up
- 2
Cook pancetta in a pan with oil. Once browned, add spaghetti. Mix well for 1 min. Add Parmesan and mix
- 3
Beat eggs and add to spaghetti. Give slight mix. Cook on medium for 3-4 until brown. Flip over and cook for another 3-4 mins

Serve Golden brown :)

If your oven is large enough then just add the eggs into the mixture and then straight into your oven. If not then do what I do toss the ready made ingredients from the skillet into a oil brushed baking pan and then add the eggs. This is a bit of extra work but at the end it is all worth it. 🙂Who knows maybe someday I will be able to afford a nice size oven, I will keep hoping 🙂 Foodzesty -
