Ingredients

  1. For Baati
  2. 1 cupwheat flour
  3. 1/4 cupgram flour
  4. 1/4 cupsemolina
  5. 1/4 cupoil or ghee (for moin)
  6. to tasteSalt
  7. 1/4 cupcurd or buttermilk
  8. 1 cupghee to dip baatis
  9. For dal
  10. 1 cuptoor dal washed and soaked for 1/2 hour
  11. 1/4 cupyellow moong dal wash and soaked for half hour
  12. to tasteSalt
  13. 1 tspTurmeric Powder
  14. 2 tspJaggery
  15. 2 tspImli(tamarind) pulp
  16. 1 Tbspghee for Tadka
  17. 1/2 tspasafoetida
  18. 1 tspcumin seeds
  19. 1 inchginger finely chopped
  20. 4-5green chillies with slits in between
  21. 1/2 tspRed chilli powder
  22. 2big tomatoes finely chopped
  23. 1lemon juice
  24. 1 tspGreen coriander 4-5 tsp finely chopped
  25. For Tadka Mirchi
  26. 15-20green chillies with slit in between
  27. 2 tspOil
  28. 1 tspMustard seeds
  29. 1 tspcumin seeds
  30. 1 tsp coriander seeds
  31. to tasteSalt
  32. 1 tspvinegar
  33. 1/4 tspasafoetida

Cooking Instructions

    Take all flour for baati and mix with ghee or oil properly. Add salt, buttermilk and then knead a soft dough with the help of water. Keep aside for 15-20 min.

    Simultaneously boil daal with turmeric and salt and jaggery and imli pulp in a pressure cooker for 2-3 whistles and let cool.

    In the meanwhile preheat the gas tandoor and prepare small balls of prepared dough. Place them separately in the wire rack and cook while changed the sides every few minutes.

    Prepare Tadka for daal- take a pan, add some ghee, Asafoetida, cumin seeds and tomatoes. Add some salt and cover till mushy. Add chillies, ginger and chillies. Add cooked daal and mix well with hand blender. Add green coriander and boil for a couple of minutes. Add red chilli ghee to garnish.

    For Tadka Mirchi- Take a pan, add oil, add asafoetida, mustard seeds, cumin seeds, coriander powder, red chilli powder, salt to taste and cook for a few minutes. Take down and add vinegar to have a comparatively long shelf life.

    When baatis are ready, serve them by slightly breaking them and dipping them in ghee, along with daal Tadka, Tadka mirchi, green chutney, sev, salad and buttermilk..
