Ingredients

  1. 5 cchopped carrot
  2. 1/2 cupsugar
  3. 1/4 cupcorn flour
  4. 1 cupwater
  5. 2 tbspghee
  6. 1/2 TSPsaffron
  7. 1/2 cdesiccated coconut
  8. 1/2 cchopped nuts (almonds)

    Make a checklist. keep all required ingredients close by. Dissolve saffron in 1 tablespoon of boiling hot water in a small bowl. Peel the carrot and cut it into 2-3 inch long pieces.

    Place carrot pieces in a steam basket and cook in a pressure cooker until soft. After cooling, add sugar and water and puree in a blender.
    Place a wire basket (sieve)over a bowl and strain the carrot mixture.

    Add corn flour to the bowl and whisk..Do the next step on the stove top or in the microwave. I can't stand under the stove and stir. (severe tendonitis in my ankle) So I placed the carrot mixture in the microwave, added ghee and stirred it for 1 minute, and stirring once every 2 minutes, and it was ready in 8 minutes.

    Place the skillet over medium heat. Keep stirring to prevent sticking. 5 min. Then add saffron, ghee and stir. Reduce heat. Ghee will separate and mixture will take shape, turn off stove.Line a box with parchment paper,, letting 2 sides of the paper hang down (pictured). Add the carrot mixture, level it with a spatula, making sure it is of uniform thickness. rest for 1 hour or until the dessert is set well.

    Grab the hanging paper and lift it from the box. Place it on a plate. Cut into the shape of your choice and roll into desiccated coconut.

    Garnish with chopped nuts.
    Taste and enjoy. You can cut the burfi into small pieces and place them on top of ice cream. Tastes delicious.. Share; have fun with your family and friends
