Ingredients

25min + prep
6-8 people
  1. 1panettone cake
  2. 2large eggs
  3. 4egg yolks
  4. 2 tbspscaster sugar
  5. 1 tbsphoney
  6. 3 tbspsmarsala
  7. You can substitute drinking sherry for marsala
  8. 400 mlwhole milk
  9. 100 mldouble cream
  10. Splashvanilla extract
  11. Demerara sugar
  12. Icing sugar
  13. Ricotta and honey to servep

Cooking Instructions

25min + prep
  1. 1

    1st: Beat the eggs and sugar until smooth.

  2. 2

    2nd: Add the honey, vanilla, marsala, milk and double cream. Whisk but not too vigorously. Set aside.

  3. 3

    3rd: Slice the panettone cake into inch thick slices and arrange in an oven proof dish with the sides sticking up.

  4. 4

    4th: Ladle the eggy mixture over the panettone slices until the bread has soaked up most of the liquid. Allow the mixture to soak into the panettone before placing in the oven. NB You may not need all the mixture.

    5th: Sprinkle Demerera sugar all over the top.

  6. 6

    6th: Bake in an oven at 160ºC for 25mins until top is browned and crunchy.  Dust with icing sugar. Serve with ricotta and honey.

what a great idea to use Panettone to make Bread and Butter Pudding!! Did you take a photo of how it turned out @Trucker_Kev I'm intrigued as to how it turned out for you. This sounds delicious, I do like Panettone so I can only imagine how lovely and Christmassy this must taste with your added marsala....Yummy!! deinfiantely bookmarking tis to try next time I have a Panettone
