With the leftover Aarhar daal I prefer to prepare Sambar for my family with sambar masala powder. It's tasty with lots of available veggies. This recipe is healthy and goes well with steamed rice and pickle.

Ingredients

10 minutes
3-4 servings
  1. 1 cupleftover daal
  2. 2 cupschopped veggies (eggplant, 🍆, Parmal (pointed gourd), pumpkin, ladies finger, onion and tomato)
  3. 1spring curry leaves
  4. 2chillies (not so hot)
  5. 1 Tspmustard seeds
  6. 1 pinchAsafoetida/ hing
  7. 1/2 Tspkashmiri red chilli powder for taste and colour
  8. Salt and turmeric as required
  9. 2 Tbspsambar masala powder
  10. 1.5 Tbspamchur powder or tamarind paste
  11. 1/2 Tspsugar,
  12. 2 Tbsp cooking oil
  13. 1 Tbspcoriander leaves
  14. Accompaniment
  15. Steamed Rice Cucumber salad Lemon pickle

Cooking Instructions

  1. 1

    Assemble the ingredients. Wash and chop veggies and tomatoes. Heat oil in a pressure cooker. Add and allow the mustard seeds to crackle. Add curry leaves.

    Further add sliced onions, broken chillies, hing and saute for a minute.

    Add chopped veggies, tomatoes, salt, turmeric, chilli powder and mix well.

    Then add sambar powder and mix nicely with the veggies. Saute on low flame for 2 minutes.

    Now mix 1 1/2 cup of water and amchur powder. Mix well and pressure cook for one whistle. Allow to cool naturally. Mix half Tsp sugar with cooked sambar.

    Garnish with fresh coriander leaves and serve with steamed rice, cucumber salad and lemon pickle and njoy.
