Jimikand, also known as elephant foot yam or suran, is a starchy, tuberous root vegetable that is a staple in many Asian cuisines, especially India. 
Yam/Suran Chips or Elephant foot Yam chips, are a delicious snacks or served as a side dish to an Indian main course. Easy and quick recipe to prepare with few ingredients like Suran slices, Turmeric Powder, Red Chilli Powder, Lemon Juice and Salt. For a crunchy texture, coat marinated yam slices with rice flour or semolina and then shallow fry them.

Ingredients

25 minutes
3 or 4 servings
  1. 200 gramsYam/Jimikand/elephant foot Yam
  2. 1 tspKashmiri red chilli powder
  3. 1/2 tspturmeric powder
  4. 2 tsplemon juice or vinegar
  5. As neededsalt per taste
  6. As neededoil for deep or shallow frying
  7. 3 tablespoonsor as needed Rice flour for coating

Cooking Instructions

    Wash the suran well in water to remove mud. Then peel and cut it into thin slices.
    Soak the yam slices in plenty of water for 5 minutes to release the starch. Then Drain and pat dry with a clean napkin.

    In a bowl, mix the yam pieces well with the lemon juice. Sour or acidic ingredients relieve itching and burning sensation on the tongue and throat after eating suran.

    Then add turmeric powder, red chili powder, salt and spread it all over slices. Mix well, so that Suran slices are well coated with lemon juice and spice powders.
    Cover and let the Suran Slices marinate for 10-15 minutes.

    Before frying, coat the marinated yam slices in rice flour and fry in oil, while adding oil as needed.
    Or you can skip coating with rice flour optional and shallow fry the yam slices after marinating.

    Mix rice flour, pinch of salt well in a small dish. Coat the marinated yam slices with the rice flour mixture and then shallow fry

    Heat oil in a non-stick pan or kadai. For the first batch you can add about 3 to 4 tbsp oil and then add as needed.

    Add Yam slices in batches and fry for 5-7 minutes or until crispy and golden.Then flip and fry the other side. Fry on low-medium flame till crispy and golden on both sides.

    Then remove from oil and place on absorbent paper to remove excess oil. In the same way, fry the rest of the suran slices.

    Serve Yam Chips as delicious snacks or served as a side dish to an Indian main course
