This is the Okra or Bhindi season. We make Bhindi and onion fry , Kurkure Bhindi, Bhindi and Aloo subzi , Bhindi and Tomato Khatti and a lot more to say. Have you ever cooked Bhindi with mustard paste?? And without using oil. Seems so peculiar. Isn't it? I usually prepare this recipe sometimes with and without oil use. Taste doesn't differ. Try once. You will like it's taste.

Ingredients

  1. 300 gmsfresh Bhindi washed, wiped to make dry and cut in 1 inch
  2. 1larger Onion cut in thin and longitude way
  3. 2medium red salad Tomato chopped
  4. 2green chilies slit and deseeded
  5. 1 tbspgarlic minced
  6. 4Curry leaves chopped
  7. 1/2 tspKashmiri red chilli powder
  8. 1/3 tspturmeric powder
  9. Salt as required
  10. togarnishGreen coriander leaves
  11. 1dried mango ( homemade in summer in earthen pots with salt and sun-dried. can be preserred for many years. We in Odisha call it AMBULA
  12. For mustard paste
  13. 1 tbspblack mustard seeds
  14. 2 tspyellow mustard seeds
  15. 1/2 tspzeera
  16. 1/3 tspKalonji
  17. 1/3 tspAjwain
  18. 1 pinchturmeric powder

Cooking Instructions

  1. 1

    First soak the ingredients of mustard paste. Grind to a fine paste and immediately keep in the refrigerator to avoid the bitterness of mustard. Yes you can store this paste for further use.

    Mix all the vegetables ingredients except coriander leaves properly in a microwavable bowl and leave for 10 minutes to marinate. Use a pinch of salt as we are using dry mango, having more salt.

    Soak the dry mango for 15 minutes in lukewarm water.

    Now in a pre heated microwave cook the marinated veggies covered for 3 mins. Let it cool down.

    Take 2 tsp of mustard paste and mix with 2 tbsp or more to make a running batter.

    Heat a pan. Add the mustard paste batter. When it starts boiling add the cooked Bhindi from the microwave bowl and lower the flame.Cook for 1 min or till veggies soft. Add the soaked dried mango with water and a pinch of sugar.

    Cook till to get the gravy you like. Bring down from the flame.Garnish with coriander leaves and serve hot yummy yummy Bhindi mustard paste masala Curry with Rice and/or Roti.
