Chicken Drumsticks & Daikon Radish Simmered with Miso & Soy Sauce

I added miso to make this variation of my regular soy sauce-based simmered chicken drumstick and daikon radish recipe.
If you wait about half a day before eating it, the flavors will be absorbed better.

Chicken Drumsticks & Daikon Radish Simmered with Miso & Soy Sauce
I added miso to make this variation of my regular soy sauce-based simmered chicken drumstick and daikon radish recipe.

Cooking Instructions

Pour the oil in the pan and start cooking the chicken drumsticks, skin side down. When they start to brown, flip and continue cooking.

Add the daikon radish. Shake the pan to coat everything with the oil. Drizzle in the sake and add the water and dashi stock granules. Continue cooking.

Skim off the scum. When the daikon radish is cooked through, add the sugar and mirin and simmer for 5 minutes (use medium-low heat). Put the lid on!

Add the soy sauce and simmer for 10 minutes. Finally, add the miso and let it dissolve.

When you're ready to eat it, heat it again and add daikon leaves for color (if you have them).
