Ugali with spinach and cabbage served with avocado

This is the ultimate meal to end my weekend.
Cooking Instructions

Wash the vegetables thoroughly in flowing water.

Cut the vegetables into desired size but I prefer small sizes.

Put cooking oil in a sufuria and allow to heat up for a minute.

Add chopped onions and stir for close to a minute till it turns golden brown.

Add diced tomatoes and stir till it cooks completely that's close to 2 minutes. Then add salt to taste.

Add the vegetables and cover to steam.

Uncover and stir then cover again to cook for a minute.

Vegetables are ready to serve with ugali and avocado.

My husband also requested it, so I tried recreating it.The key is to cut the vegetables into large pieces, and enjoy their tastes. Filling Tonjiru (miso soup with pork and vegetables)
This is the ultimate version I arrived at after many trials.The key is to use a generous amount of sesame oil at the end. The flavour is greatly enhanced by it. Two kinds of miso are used in the recipe, but of course, just one kind is still fine. Adjust the strength and taste of miso to your liking. I recommend using a highly aromatic sesame oil. A favorite of our family's. This dish can easily be made ahead of time and you can also freeze before baking for an easy dinner option in the future. This is a very filling meal, only a few shells along with a small salad will be enough to fill you up! It seems like a lot of steps (and dishes) to prepare this dish, but the end result is well worth it!

I love potage, and I end up consuming a lot of spinach with this potage soup.It's a good idea to separate stems and leaves of the spinach ahead of time.If it's spring time, you can use sweet onions.
