This is wonderful to cook while your away and come home to a great meal. Use for sandwiches or as main course with sides. I cooked this one on a rotisserie and basted with the glaze while cooking. Can slice if you like.

Ingredients

  1. 13-4 pound pork shoulder. I use Boston butt
  2. 1 1/2 cupapple cider ( not vinegar cider )
  3. 1/2 cupolive oil, extra virgin
  4. 1/2 cupreal maple syrup
  5. 1 tspgrated, fresh ginger
  6. 1/3 cupgood bourbon. I use Jim beam for mine
  7. 2 clovefinely chopped garlic
  8. 1/3 cupDijon mustard
  9. 1 cupFavorite BBQ sauce
  10. salt and ground black pepper

Cooking Instructions

    Combine all ingredients except BBQ sauce, in crock pot or slow cooker.

    Cook on low for 6-7 hours or longer if needed. The pork needs to be tender enough to shred.

    When pork is done, remove from pot and shred.

  4. 4

    Mix 2 cups of the juices from the crock pot with the BBQ sauce and bring to boil to reduce and thicken slightly. Usually about 2 minutes or so. Stir constantly.

    Pour over shredded pork and serve. You can also mix all together and keep warm in crock pot after removing the cooking liquid first.
