Carrot Cake
A good way of incorporating surplus carrots into a cake
Cooking Instructions

Preheat oven to 180 degrees

Grease the baking tin and dust with flour

Mix the carrot and sugar and let sit for five minutes

Add the eggs, one at a time and mix well

Add oil and mix well

Add the flour, spices and baking powder and mix well

Pour into prepared tin and bake for 50 minutes

Let it cool in the tin and then decorate it.

To decorate

200 gm cream cheese

100 gm shortening

100 gm margarine

2 cups icing sugar

Soften the shortening and margarine with a wooden spoon until light and fluffy. Add the cream cheese, mix well, then add the icing sugar

Mix until well combined and there are no lumps

Cover your cake with the cream cheese
