Cooking Instructions

Put all your ingredients in a clean bowl apart from the water

Add the water in bits till the dough comes together. Knead you dough for about 7-10 minutes to activate the yeast

Grease your bowl and allow the dough to rest till it doubles in size
- 4
Once the dough rises,deflate it and pinch out some balls from the dough
- 5
Cover them with a clean kitchen towel...Roll each ball to circular discs..not too thick or too thin

Cover them and give them a few minutes to rise for the second time before cooking them
- 7
Start with the one you rolled out the first. Let it cook on one side before turning to the other side

This reaction is perfectly ok..the pita bread appears to swell

Cook all your pita breads...

Serve them for breakfast,lunch,or dinner

I was amazed at the pita bread I ate in a Turkish store, so I came up with this recipe for a puffy pita using the same dough as naan.The tips for puffy pita are to allow the surface to dry a bit after rolling, bake them with the bottom moist side up, and to bake at a high temperature for a short amount of time.By adding baking powder, I was able to get the dough to puff up nicely. This is a small batch recipe for 3 medium pita breads. The secret to getting them to puff up into pockets is a super hot oven (at least 260°C/500°F). I recommend sticking to white flour for this because it seems whole wheat flours don't do a good job of rising well (which means no pocket!).Great for falafel, or any kind of sandwich fillings you like. I was making "eterno"'s bagels and was really impressed by the idea of using a processor to make them. I wondered if it was possible to make pita bread the same way, and after much trial and error I finally arrived at this recipe.In Step 4, make sure the seams are facing up when rolling the dough out with a rolling pin.
