Meatballs in tomato and coconut sauce
I'm pretty sure that my ability to cook is one of the keys to my marriage. In fact, I'm not 100% certain my wife would've agreed to marry me if it weren't for my passion for food and cooking. Still, that doesn't mean she doesn't occasionally have her doubts. Like when I told her I was going to make meatballs with tomato and coconut sauce for dinner. At first she assumed it'd be a curry, and when I told her it wouldn't be she simply said "it sounds a little weird." Fortunately the dish worked out (pretty brilliantly, actually), and both she and our daughter are believers once again.

Cheese meatballs in tomato sauce

Mozzarella stuffed meatballs in tomato sauce
These cheese-stuffed nuggets were intended for my daughter, but funnily it was my wife who liked them most. They work great in a sub sandwich, since the thick sauce won't run everywhere. Or you can go the traditional route and just ladle them atop a plate of noodles.

Mike's 5 Minute Meatballs & Marinara Sauce
30 minutes simmer time total is all this easy recipe takes. I tell ya, whoever said fast can't be fantastic was an idiot. Pfft! Nuts to that! My 8 year old student threw this delicious concoction together in five minutes flat then, ran outside to play.Granted, for time and common sense sake, Sammy did use all of our leftover - pre-chopped vegetables from Taco Night here in the O'Brien Shire. As well as pre-fabed Italian Sausage Meatballs & Marinara Sauce. But, that didn't make her dish any less nom nom nummy! After all, I'm all about the deliciously easy. But, what busy Cook, Chef or parent isn't?!All photos and directions below were posted by Sammy herself. Great work sweet baby girl! Your dish really was excellent!Remember, you don't have to slave hours upon hours for savory, hot, cheesy deliciousness!

Red Bean Meatballs with Orange Sauce
Legumes often bring to mind dishes like soups and stews, perhaps paired with grains: they are certainly delicious (I love them, and even the walls know it by now!), but as I will soon show you, they can also become the stars of great street food-style preparations! An example is meatballs, which can become a vast territory for all kinds of experimentation. Today for lunch, we enjoyed these exquisite red bean meatballs, among the most used legumes in Japan (you can find excellent ones grown in Italy), accompanied by an orange sauce. The presence of spices, which give a distinct "oriental" touch, and the sauce, which makes them shiny and even softer, make them a real treat that will definitely be a hit, whether at the table, at a buffet, or as takeout! Paired with a portion of basmati rice and red Thai rice, they become a complete dish, given the presence of cauliflower in the meatball mixture. I can only wish you a good preparation!

Meatballs in Tomato Sauce - Great with Pasta
This is the meatball variation of our family's standard recipe for simmered hamburger steaks. I got the idea from a cookbook I looked at a very long time ago! My family all love this.To prevent the meatballs from falling apart...In Step 3, drop the meat mixture into the bowl from a height several times to eliminate air bubbles. In Step 4, brown the meatballs over high heat. If you are serving this to small children, omit the red chili peppers. For 4 servings. Recipe by Chisora
